    Quilla’s wine is a blend of wines from different terroirs in the commune of La Haye-Fouassière. Quintessential Muscadet, it offers clean, ripe fruit, with a gunflinty note on the nose, nice balancing acidity and a long minerally finish.

    Grape: Melon de Bourgogne, 32 years of age and trained single guyot. Root stock 3309. Density 6,500 vines per hectare. Massale selection. 
    Terroir: Spread around hills north of the Sèvre river. Mixed soils of sandstone, schiste, gneiss with amphybolite, mica and quartz crystals. Soil depth between 10-20cms. Altitude 30-54 metres, facing east, south and south west with a 2-6 % slope.  
    Viticulture: De-bud and green harvest the young vines. Allow grass to grow during winter. Use organic spray to kill this off in May and repeat until harvest. Amend limestone balance in the soil and add horse manure occasionally. No ploughing as they maintain grass between rows. Machine harvest 98% of vines – old vines are hand-harvested. Yield of 45-50 H/H.  
    Vinification: 100% destalk. Prefermentive maceration at 15C for 12 hours. Fermented in underground cuves at 12-17C for 21 days. Pneumatic press. Left on lees until late April in the underground cuves(no malolactics). Lees are stirred during November and December. No racking, filtered by plaque. Bottled twice per vintage by their own equipment at the domaine. Temperature controlled throughout whole cave. Réseau Protection Raisonnée Ariane. Total production: 180,000 bottles
