    Grape:100% Savagnin (13% alc.)

    This wine comes from blue-grey marls, and has been aged for two years under a veil of yeast, in four to five year old barrels. From 30hh yields, it has wonderful mushroomy, hazlenutty flavours, nicely relieved by the savagnin’s characteristic acidity. For drinking now to 2016.

    Grape: 100% Savagnin – 40 yr old vines. Selection massale. 6000 vines per hectare, trained single guyot. 
    Terroir: Blue-grey marls. Triassic salt beds occur at the base of the valley and these may permeate through the marls. West and south-west aspect. Gentle 10-15% slopes. 
    Viticulture: Debud manually. Never carried out vendanges en vert. The soil is turned over 1 row in 2 during autumn, and the practice is alternated in spring. Uses sulphur against oidium, no pesticides and no herbicides. Organic fertiliser used very occasionally. Traditional hand pruning to produce low yields (30 hl/ha). Hand harvest. The grapes are picked late – savagnin still retains a high natural acidity. 
    Vinification: Pressed by pneumatic press. Vinified in old foudres. Malos completed. Aged for 2 yrs (the barrels are not topped up) under a veil of yeast (sur voile) in 4/5 year-old barrels from Burgundy. Assembled and bottled without fining or filtration.
