    Grape:55% Chardonnay, 35% Savagnin, 10% Poulsard (10.5% alc.)

    Julien now adds a little Poulsard to give this wine an extra dimension. La Paille Perdue is a declassified Vin de Paille, the concentration of sugar not allowing the yeasts to reach the necessary 14.5% alcohol. In fact the residual sugar of 175g/ltr feels totally harmonious. Concentrated lexia raisins on the palate with a refreshing acidity. Delicious sweet wine, not cloying and all the better for having just 10.5% alcohol. For drinking now to 2014+. Sweet, price per 37.5cl.

    Grape: 35% Savagnin, 55% Chardonnay, 10% Poulsard. Selection Massale from Rotalier, de Maynal and de Vercia,. Average vine age is 60. Planted at density of 7,500 vines per hectare and trained to single or double guyot depending on vigour.  
    Terroir: Soils are Marne du Lias, clay decalcification and Bathonian chalk. Elevation of 220-240 meters with east and west facing slopes of 10-15% gradient. Depth of soil is 80 -120 cms.  
    Viticulture: De-budding and no green harvesting. Grass between rows and lightly plough alternate rows each May. Plough the other rows the next year. Bordeaux mixture (copper sulphate and hydrated lime) to prevent mildew and flowers of sulphur against Oidium. No herbicides or pest control. Natural fertiliser is added very occasionally. Manual selection during harvest rather than ‘table de trie’. Sugars concentrate as the grapes dry on the vine (passerillé). Yield of 15 h/h  
    Vinification: Highly concentrated juice is pressed (pneumatic) for 24 hours without de-stemming and then juice settles for 12 hours. Fermentation for 20 months and with natural yeast is in 8-10 year old barrels and at 15C. Bottled in May. A 36 month élevage in 8-10 year old barrels without racking, batonnage, fining or filtration. One domaine bottling in March using natural 49 x 24 super Manuel Serra corks. Production is 1,000 bottles.
