87 Médoc Cru Bourgeois AC 2006
    Château Saint-Aubin

Grape:31% Merlot, 30% Cabernet Sauvignon, 22% Cabernet Franc, 17% Petit Verdot (12.5% alc.)

Mid-weight, this wine has a beautiful, clear mid-claret colour. Aged in three and four year old barrels it offers blackcurrant, plummy, spicy flavours with a hint of cedar and cigar box in the background. It is already giving a lot of pleasure but will improve to a peak over the next year. For drinking now to 2012.

    14.66 hectares
Grape: 30% Cabernet Sauvignon, 31% Merlot, 22% Cabernet Franc, 17% Petit Verdot. 15 yr old vines on 101-14-3309 and Riparia Gloire rootstock
Terroir: Gravelly, sandy soil on a gravel crop (formerly an island) of Jau-Dignac-et-Loirac right at the north end of the Médoc. The maritime influence is very strong. Aspect slightly towards the east but pretty flat.
Viticulture: Hoe the surface of the soil but don’t plough. Debud. Carry out vendanges-en-vert on the petit verdot, sometimes the merlot but never the cabernet. Use sulphur and Bordeaux mix against oidium and mildew, and apply herbicides gently.
Vinification: No cold soak. Destalked 100%. Vinification in stainless steel tanks with natural, indigenous yeasts. Max temperature of fermentation is 31°C. Vinification and maceration 28 days. Remontage twice a day and nitrogen injected into must to chase out oxygen. Light pressing by Vaslin press. Press wine re-assembled immediately. Malos in cuve. Racked after malos and before transferring into barrel at the start of January. 1 year in 3 and 4 year old barrels (racked 4 times). Then assembled and left to decant in cuve before bottling after a light fining with egg whites in April/May after 20 months.
