    Grape:55% Merlot, 25% Cabernet Sauvignon, 20% Cabernet Franc (13% alc.)

    From a 20 hectare single parcel of land, with some 60 year old vines, grapes are harvested late and the yield is 25% less than the maximum permitted under the appellation’s rules. This is an excellent wine at this price level, with a lovely rich fruity nose (prune, tobacco, coffee), luscious mouth feel, with good attack and length on the palate. For drinking now to 2012.

    Grape: 60% Merlot, 30% Cabernet Sauvignon, 10% Cabernet Franc planted on double guyot at a density of 6,000 vines per hectare. Root stocks Riparia Gloire, 101-14 3309EM. Average age of 30 years 
    Terroir: Clay-limestone and clay gravel mix at 43 metres altitude and facing east, south and west. Depth of soil 0.3metres to 1.50metres. 
    Viticulture: De-buds and green harvests. Grassed between all the rows. Ploughs between rows of the young vines. Cuts and manages grass in rows between older vines. Sulphur to prevent oidium and ‘confusion sexuelle’ for pests. Natural compost on the young vines. Manual harvest and then has a table de trie. Yield of 48 h/h 
    Vinification: Totally destalked and crushed. Fermentation in temperature controlled stainless steel cuves at 28C. Remontages twice a day for 5 days and then once a day for 3 days. Alcoholic fermentation for 8 days and a 2-3 week cuvaison. Pneumatic press and press wine is not added back. Heats the cuves to 20C to initiate the malo. Elevage for 15 months in fûts of which 25% are new (medium toast). Racked once or twice. Fines and filters. One bottling a year/vintage. Total production: 50,000 bottles.
