Old vines, biodynamic viticulture and a well-judged vinification produce this excellent wine. Cuve aged it has good depth, rich fruit and a tangy freshness conveyed by limestone. For drinking now to 2019+.

domaine:0.5 ha Grape: 40% Clairette, 30% Bourboulenc, 20% Roussanne and 10% Grenache blanc. Massal selection from the domain for every single replacement of vine. R110 rootstock (Rupertris du lot). 50 years old vines. 3500 vines per hectare on average. Trained gobelet. Terroir: Sands. 40m above sea level. Viticulture: Debudding. Doesn’t carry out vendanges en vert. 6 to 8 ploughing per year. Doesn’t allow the grass to grow. Sulphur, copper and infusion of nettle against oidium and mildew. No chemical herbicides or pesticides, only organic or biodynamic fertilizers if needed. Certified organic. Biodynamic viticulture. Harvested by hand. Uses a sorting table. 25 hectos per hectare yield Vinification: Doesn’t destalk. Pressing for 1 hour by a vertical press, settling of the juice for one night. Fermentation in stainless steel (at 19°C to 20°C) using selected yeasts. Alcoholic fermentation for 3 weeks average. The wine doesn’t carry out its malolactic fermentation. Aged for 7 months in stainless steel with 2 rackings. No bâtonnage. No collage and no filtration. Only one bottling in April / May. 1800 bottles produced on average Press:
