    This is a fine VDN with cigar leaf, raisin, prune and fig flavours typical of the grenache. Delicious with rich chocolate desserts. For drinking now to 2013. Sweet, price per 50cl.

    25 hectares 
    Grape: 90% Grenache, 10% Carignan. Average 25 years and a density of 3,500 vines per hectare. Trained cordon royat.  
    Terroir: Argilo-calcaire and yellow marl on 20% gradient slopes. Elevation of 290 metres. Depth of soil 5 metres. South west facing slopes.  
    Viticulture: De-buds and green harvests. Ploughs 6 times a year with a horse. Light dose of copper sulphate to prevent oidium. No pest problem. No herbicides. Uses organic animal and vegetal compost. Manual harvest grape by grape and uses a table de trie. Yield 20 h/h 
    Vinification: De-stalked 50%, lightly crushed and then a prefermentive maceration for 4 days at 15C. Varieties vinified seperately in 150 hecto cement cuves with natural yeast and at up to 25C. One foot pigeage every three days. Alcoholic ferment for 4-5 days before arresting by addition of up to 10% of the total volume of neutral alcohol (marc). Then a further 14 days of maceration with alcohol (at 25C) and thus a total cuvaison of 20 days. Leaves 100g/litre of residual sugar. Mechanical press and press wine is added back. Elevage in cement cuves and 10% in one year old fûts. 11 months on fine lees. Racked once. No need for fining or filtration. Converting to Ecocert bio. Total production 5,000 bottles.
