    Grape:70% Grenache, 10% Syrah, 10% Carignan, 10% Mourvèdre (14.5% alc.)

    An organic approach to viticulture, old vines, low yields (20 hectos per hectare) all help to produce this fine, long-lived wine. A very deep black cherry colour, there is a mineral quality on the nose and dense, tightly packed fruit. For drinking now to 2014.

    Grape: 70% Grenache, 10% Syrah, 10% Mourvèdre, 10% Carignan. 60 year old Carignan and Grenache. Density of 3,500 vines per hectare. Trained gobelet and royat. Rupestris du Lot root stock 
    Terroir: Argilo-calcaire on 30% slopes. Yellow and blue marl. Elevation of 290 metres. Depth of soil 5 metres. Southerly facing slopes for Grenache and carignan. Flat terrain for Mourvèdre. 
    Viticulture: Converting to Ecocert organic viticulture. De-buds and green harvests. Ploughs 6 times a year using a horse. Light dose of copper sulphate to prevent oidium. No pest problem. Uses organic animal and vegetal compost. Manual harvest and uses a table de trie. Yield- 10-15h/h for Grenache and 20h/h for Carignan, Mourvedre and Syrah. 
    Vinification: De-stalked 100%, lightly crushed and then a prefermentive maceration for 3 days at 17C. Varieties vinified seperately in 150 hecto cement cuves (1 remontage every day for 4 days) with natural yeast at up to 25C for 15 days and with a total cuvaison of 20 days. Mechanical press and press wine is added back. Cellars not heated for the malo. Elevage in cement cuves and 10% in one year old fûts. 20 months on fine lees. Racked twice. No fining or filtration. Production 5,000 bottles.
