The Alary brothers choose cooler eastern facing slopes in the hills to the northeast of the Cairanne appellation for this white. It is a delicious blend with exotic fruits, touch of honey and a rare freshness. For drinking now to 2011.

domaine:28 hectares (7000 bts Cairanne Blanc produced) Grape: 40% Clairette, 50% Roussanne, 10% Viognier. 30 yr old vines. 5000 vines per hectare in gobelet formation. Selection massale Terroir: Clay/limestone. Planted with aspect to east in north-east sector of Cairanne only 200 mtrs away from edge of Rasteau appellation. On a 20° slope (only 35% of Cairanne is on slopes). Quartier called Les Douyes. Yield = 45 hectos per hectare. Viticulture: The vines are worked naturally without chemical fertilisers or pesticides. The soil is ploughed and grass allowed to grow in alternate rows. Debud severely in May. Hand harvest – severe sorting both in the vineyard and back at the cave via a table de trie. Vinification: Chill grapes down to 8° or 10° initially then quite a low ferment at 18° - only indigenous yeasts used. Stainless steel cuve aged – left on the fine lees until end of April. Malos blocked for this wine but carried out for Haut Coustias. Fined with isinglass and bottled beginning of May. Press:
