    Grape:100% Mondeuse (12% alc.)

    A brilliant wine from 50 year old vines grown in broken up mountain scree. Harvested at almost the same yield as northern Rhône syrah (42hh) and aged in cuve, it shows the kinship between mondeuse and a Côte-Rôtiesque syrah. It is elegant, spicy, with peppery, dark fruits and a stony, mineral flavour. For drinking now to 2013+.

    3 hectares (sold 2.8 hectares to concentrate on producing quality wines and convert to agro-bio). 
    Grape: 50-year-old Mondeuse (this not the Italian Refosco as is often wrongly written). NB Rhône syrah is a natural cross between Dureza (black berries grape from the Ardèche and Mondeuse Blanche from Savoie). 9000 vines per hectare, massale selection. 
    Terroir: Glacial debris & limestone on lower mountain slopes. Southerly aspect, 30% slope. 
    Viticulture: Practiced bio-dynamic viticulture since 2006 and certified Eco-cert (organic). Ploughs and hoes the soil. 4 to 5 bunches of grapes per vine, or 35 hectos per hectare. Debuds, but never vendanges en vert, and leaf thins towards the end of August, looking for maximum aeration of the grape bunch. Hand harvested in 2 tries. 
    Vinification: Not destalked – the stalks that go into the cuves are ripe. Grape bunches directly into fermentation cuves with no addition of sulphur. Macerates for 30 days with 1 pigeage every 3-4 days. The fermentation temperature is a low 15°C. Pressed using pneumatic press and transferred into a fibreglass cuve where malos take place. Bottled in May after a light filtering with just a touch of sulphur.
