This red wine comes from 70 and 110 year old vines in an excellent lieu dit. The yield was just 25hh and Julien believes this is the finest vintage he has produced to date. A delicate light pinot in colour, this has a silky texture, vibrant red fruits, touch of pepper and clear-cut minerality. Very long on the finish, it will age effortlessly. For drinking now to 2020+.

domaine:3 hectares of which this cuvée comprises 0.26ha Grape: 100% Poulsard. Old massal selection from various vineyards in the Southern Jura made by Julien’s great-great grandfather. 80 year old + vines (most of the vines have been planted in 1898). 10000 vines per hectare on average Terroir: Blue marls from the Lias and schist from the Secondary Era. East aspect on 15% hillside. 350 mtrs above sea-level. Soil depth 50cm to 1m Viticulture: Debudding. Does not carry out vendanges en vert. Uses a motorised cultivator during Spring and a lawn mower in August to manage the grass. Uses Bordeaux mixture, sulphur (flower), milk, horsetail, nettle, willow 4 to 5 times a year (at 50 % of the recommended dose) to fight against oidium and mildew. No chemical herbicides or pesticides, no fertilizers. Organic certification in process. Harvested by hand with the grape pickers doing the sorting in the vineyard. 10 to 15 hectos per hectare yield Vinification: 100% destalking by hand. The grapes are not crushed. Cold pre-fermentation for 5 / 6 days then semi-carbonic maceration. Alcoholic fermentation in 15 year old tronconic wooden vat. Fermentation for 15 days (at 18°C) using natural, indigenous yeasts. 12 remontage and pigeage during the fermentation. Pressed by a pneumatic press. The press wine is blended. Aged for 9 months in 225L barrels, all between 8 to 10 years old. No racking. Bâtonnage is very rare, no filtration and no collage. Only one bottling in April. 600 bottles produced on average ! Press:
