    Grape:50% Cinsault, 20% Syrah, 15% Grenache, 15% Carignan, (13% alc.)

    Yields are limited here from an excellent terroir of limestone-clay and sandstone. A delicate salmon pink colour, this rosé offers fresh red fruit flavours with a mineral complexity.

    Grape: Cinsault, Syrah, Grenache and Carignan. 40 year old vines planted at 4,000 vines per hectare and trained to gobelet or cordon de royat (single spur ).  
    Terroir: Limestone and clay (Argilo calcaire) and red sandstone with rock on gentle south-east facing slopes at an elevation of 200 metres.  
    Viticulture: De-bud. Ploughs grass between the rows and between vines in spring and summer. Copper sulphate to prevent mildew and sulphur powder to prevent oidium. Bacillus Thuringensis bacteria occasionally used to prevent damage by pests. Organic fertiliser at the end of winter. Selective manual harvest in to small boxes. Yield is 20 h/h.  
    Vinification: Grapes for saignées fermentation are de-stemmed. Vaslin Bucher 12 hectolitre basket press for 3 hours. Juice settling for 24-48 hours followed by a 3 week fermentation with natural yeast in temperature controlled (16-18C) stainless steel tanks. No malolactic. Five month élevage in cuve with 2-3 rackings. Batonnage (lees stirring) every 7-10 days. Bentonite fining. One bottling at the domaine in February and with natural cork. Production is 3,500 bottles
