    Yves Falmet’s wines have attractive, unforced fruit with excellent texture and mouthfeel. This low yield, hand-harvested carignan comes from the same north-facing vineyard as his Saint Chinian and has been cuve aged to retain all its spicy, black, liquoricey fruit. For drinking now to 2012.

    Winemaker: Yves Falmet who originates from Champagne. Yves has helped to vinify in California, Australia, New Zealand, Germany and Hungary

    25 hectares total.  
    Grape: 100% Carignan. 70 years old in gobelet formation. 
    Terroir: 45° steep slope facing north-west on the southern edge of the Montagne Noire. Clay-limestone – lots of stones, alkali soil. 
    Viticulture: ‘Lutte integré’ viticulture. Pruned very short, practices both debudding and vendanges en vert. No chemical herbicides or pesticides used. Looks for maximum phenolic maturity. Hand harvested 100% 
    Vinification: Destalked 100% and lightly crushed. Vinifed and aged in cement tanks. Pumped over daily with a cuvaison of 1 month. Racked once and bottled with neither fining nor filtration after 18 months.
