Given a two year elevage in cuve, this wine has an attractive plum colour, lovely rich, complex texture on the palate, with notes of black cherry, spice, olives and herbs with savoury, fine grained tannins on the finish. For drinking now to 2012.

domaine:21 hectares Grape: Syrah, Grenache, Cab Sauv from a variety of clones. Average vine age is 25 yrs and density is 4400 to 5000 per hectare. Terroir: Clay limestone soil at 300metres above sea level; with south, south-west aspect. Depth of soil is 50 cms in some sites and 1.5metres in others. Cabardès is situated at the point where the different climatic conditions of the west (Atlantic) and south (Mediterranean) meet, allowing for a unique mix of these grape varieties. Viticulture: No de-budding or green harvesting. No treatments for pests and insects. Does not grow grass between the rows and ploughs to eliminate any that appear. Only uses organic fertilisers. Manual harvest followed by a ‘selection at the ‘table de trie’. Yield is around 35 h/h. Vinification: De-stalks 100% with no crushing and no pre-fermentive maceration. Mix of yeasts. Uses a horizontal press and blends the press wine back in. Wines have a 30 day cuvaison in a mixture of wood cuves and cement. Elevage in cuve for 2 years during which he racks 2-3 times. A light fining before bottling (but no filtration). Press:
