Jean-Baptiste Senat’s wine has a delectable kernel of old vine fruit and hints of Mediterranean herbs and spice. Cuve aged only it retains both a freshness and purity that are very rare in Languedoc. For drinking now to 2012.

domaine:16 hectares Grape: 50% Grenache (50 years old), 30% Carignan ( 100Yrs), 10% Cinsault (40Yrs), 10% Mouvèdre (30Yrs) and Syrah ( 10Yrs) Density of 5000 per hectare trained to Gobelet. Terroir: Vineyards face due south in the foothills of the Montagne Noire, on terraces comprising clay, limestone and sand. 75 metres above sea level with a South-South West exposure. Main aim is to preserve biodiversity. Tend vines with the aim of producing 1 kilo of grapes per vine. Viticulture: Organic viticulture. De-buds and green harvests. Uses flowers of sulphur against Oidium and ‘Baule de Abuminge’ to combat pests and diseases. Uses organic fertiliser to adjust the balance every autumn and ploughs between rows 3 times a year. Hand harvested at 35 h/h yield. Vinification: Use indigenous yeasts. 60% destalked, 40% left whole with no pre-fermentive maceration. Press wine is mixed in. Ferments in enamel lined steel and stainless steel with natural yeasts. Doesn’t aim for too much extraction – largely remontage with occasional pigeage. Fermentation temp is 18 to 24°C for 7 days. Cuvaison duration is 12 days. Vasselin horizontal press. Aged in fûts (2-5 year old) and cuve. No heating of the cellars for the malo. Wines are neither fined nor filtered and bottled by hand by gravity. Elevage of between 12 and 24 months. Production of 50,000 bots of which La Nine accounts for 25,000.
