    Grape:60% Chardonnay, 35% Sauvignon, 5% Muscat à Petits Grains (12.5% alc.)

    An interesting blend, Campaucels have again succeeded in producing a wine with balance and freshness. The wine offers delicate aromas of white flowers with a hint of liquorice on the finish.

    Grape: Chardonnay 50%, sauvignon 40% muscat 10% on So4 41b et 140Ru root stock. Royat training at a plant density of 3,333-5,550 per hectare and an average age of 25years. Clones are Chardonnay 96, sauvignon 102, muscat 154. 
    Terroir: Marl, limestone, clay, with soil depth of 20-50cms and at a height of 80 meters. Vineyards have a 5 % slope with south orientation for Chardonnay, North for Sauvignon and West for Muscat.  
    Viticulture: Manuel ebourgeonnage (de-budding) rather than green harvesting is used to limit the number of bunches. Grass is grown between the rows and ploughed in to the soil in both the spring and autumn. Sprays are used when absolutely necessary to combat oidium and mildew and insecticides used to control insects. No herbicides are used to control weeds and no fertilisers are added. Mechanical harvesting at night avoids the heat of the day and ensures that the grapes reach in the winery in optimum condition . Yields are at 42 H/H  
    Vinification: Bunches are de-stemmed prior to pressing (Vaslin) for 90 minutes. The juice is allowed to settle for 24-48 hours before fermentation at a temperature of 16-20C in glass lined tanks and using only natural yeast. The ideal temperature is maintained by means of a ‘drapeau’ which is immersed in to the tanks when necessary. No chaptalisation or acidification. Fermentation normally takes 20 days after which the malo-lactic takes place. Élevage is in glass fibre tanks for 3 months and without lees stirring (batonnage). The wine is racked towards the end of the year. Fining (with Bentonite) and kieselguhr filtration as required. There are three bottlings each year with the first in during the January after the harvest. Synthetic corks. Production is roughly 10,000 bottles.
