    Grape:30% Carignan, 30% Grenache, 20% Cabernet Franc, 10% Merlot, 10% Cinsault (14% alc.)

    This comes from the chalky, clayey slopes of Puéchabon, 50 kilometres north-west of Montpellier. It has an attractive ruby colour, fresh, juicy cherry fruit, spice and pepper on the palate. For drinking now to 2012.

    Grape: 30% Grenache, 20% Cabernet Franc, 10% Cinsault : 13 years old. 10% Merlot: 20 years old. 30% Carignan : 50 years old. R110 rootstock for Grenache, Cinsault, Cabernet Franc and Rupestris rootstock for Carignan. 4500 vines per hectare on average  
    Terroir: Limestone clay soil, 150 mtrs above sea-level. South / South-east aspect on 10% slope 
    Viticulture: Debudding. Don’t carry out vendanges en vert because the yields are naturally low. Leave grass to grow naturally throughout the vineyard. The soil is ploughed in Spring between the rows and between the vines. No chemical herbicides or pesticides, only organic compost. Uses sulphur against oidium and Bordeaux mixture against mildew. Organic certification with Ecocert©. Harvested by hand. The grapes are sorted out in the vineyard. 40 hectos per hectare yield on average 
    Vinification: 100% destalking. The grapes are not crushed. Cold fermentation between 18°C and 22°C in order to preserve the aromas of the fruit. Alcoholic fermentation in stainless steel with a temperature-controlled system. Fermentation for 7 days (between 18°C and 22°C) with skin contact, using natural, indigenous yeasts. Temperature is checked 3 times a day with a thermometer. One remontage and one pigeage per day during the fermentation. Cuvaison for one week with one remontage every two days. Pressed by a horizontal Vaslin press. The press wine is blended straight after pressing. Aged for 3 to 6 months in tank with 4 rackings. No bâtonnage, no filtration. Fined with egg white. Two bottling: one in January and one in April / May. 15000 bottles produced on average
