    Grape:55% Loin de l’oeil, 45% Sauvignon (12.5% alc.)

    This wine has a similar weight of fruit and taste of an oak-aged Jurançon Sec – peachy with a grapefruity twist. For drinking now to 2011.

    Grape: 55% Loin de L’oeil, 45% Sauvignon – 25 yrs old. (le bourgeon de la vigne = l’oeil i.e. long branch!) 
    Terroir: Ancient river terrace of Tarn. Alluvium and marl soil (gravel). Add lime to soil otherwise too acid. Part of loin de l’oeil parcel faces north. 
    Viticulture: Manual harvest mid-September. Loin de l’oeil keeps more malic acidity – fraicheur than sauvignon. 
    Vinification: Ferment in oak barrels – 15% now up to 5 yrs. Batonnage during elevage. Bottled in July.
