Marcillac comes from terraced hillside vineyards with extraordinary deep red soil, rich in iron oxide. Medical studies have indicated that Marcillac is particularly good for the heart as it lowers cholesterol. It is a very supple, midweight wine, with raspberry, blackberry fruit and iron on the finish. An especially versatile food wine. For drinking now to 2011.

domaine:20 hectares Grape: 100% Fer Servadou, mix/massale and clonale selection. 20 year-old vines on average Terroir: Very steep slope managed by terrasses. Deep red soil, derived from erosion of sandstone; imbued with iron oxide. 20 cm –2m of topsoil. South-west and south-east aspect. Viticulture: Debudding. Green harvest only if necessary. 50 hectolitres per hectare. Manual harvest. Vinification: 2 day pre-fermentation cold soak. Destalked 100%, grapes not crushed. Stainless steel cuve used for fermentation. Max temp 28°C. Delestage up to twice a day during a 3-4 fermentation. 15 days cuvaison. Pressed+ press wine assembled. Malolactics completed. Cuve and 3 year-old barrels (75/25). 18 months cuve, only 1 year in barrel. Fined with egg white and filtered by plaque. Press:
